It twas a hot and humid weeknight when the boys made their way to the saintly city to try the Minnesota staple, Red Cow. It has been one of the Twin Cities “must try” burger spots for many years and we were going to test their reputation.
Given my affinity toward interesting burgers, I ordered The Barcelona. This burger, topped with manchego cheese, prosciutto, piquillo pepper and pepper aioli, sounded like a spicy, salty masterpiece. Our waitress agreed dubbing it her favorite burger on the menu.
Immediately, the quality of the meat stood out. The patty was flavor-packed with a slight char. The aioli provided a somewhat mild spice and the manchego cheese cut through with a little sweet that surprised me.
In concept,
the flavor profile of this burger was interesting and fun.
But in execution, I was slightly disappointed that no one flavor stood out. There is a fine line in having too much on a burger and it felt as if they were attempting to walk that line while trying something a little different. But it could have used just a little extra punch from the aioli or one more spice-themed topping.The bun was an above average offering with some squish and a light crisp to the outside. I felt similarly about the fries - crispy and seasoned well but nothing noteworthy.
Overall, a solid burger but one that slightly disappointed due to the surrounding hype. Because my review curiously goes against the burger-connoisseur grain, a revisit and 2nd attempt should be scheduled to ensure my pallet wasn’t experiencing an “off” day.

The boys were to meet on one of the most hot and humid days of the year, and I was feeling a little buzzed from my scooter ride and anticipation to try a burger joint that's long been on our list: Red Cow.
Not wanting to be disappointed, I opted for the 2016 Burger Battle champion: the Double Barrel, which came highly recomended by our server. Even though the place was packed, our burgers arrived in a few minutes, and mine looked mouthwatering. A classic burger with no frills: It had two thick and juicy pattys, topped with melted cheese, grilled onions, and a generous amount of secret sauce. The bun was soft and toasted, and the truffle fries were crispy and golden, and very truffly. My rumbling stomach made it clear this was the right choice for me, and my tastebuds agreed.
The patty was cooked a perfect medium and the onions were charred perfectly which were complimented by the rich and creamy secret sauce and a cold IPA. My marks for this burger were as high as the temperature outside.

This round of BBBB the boys found themselves at Red Cow in Saint Paul. The second you enter you’re hit with truffle fries and grease smell and an ambiance that is very much that of any burger spot across the country. Which is the exact experience you get.
The burger just fades away into the background as another burger you ate at another burger place.
I got the ultimate burger, which has a special sauce, aged Wisconsin cheese, and certified angus beef patty. All the parts were done well. The bun was nicely toasted, the burger cooked well, the cheese nice and melty, a decent amount of sauce, and optional onion and lettuce included. Unfortunately, the sum of its parts did not add up to something greater. The sauce was by far the standout of the burger, but even that couldn’t save it from the lack of salt and the (somehow) tasteless cheese. However, eating here was not a bad experience. The redeemer of the meal was the ice-cold beer on a hot day and the company and talk that a burger place like this invites.
I would go back in a heartbeat with a group of friends, even knowing that as you leave, the burger just fades away, and the beer and company stay.
